Ingredients

  • 500g basmati rice
  • 300g fresh oyster mushrooms
  • 2 large onions, sliced
  • 1 cup plain yogurt
  • 2 tsp biryani masala
  • Fresh mint leaves
  • Fried onions for garnish

Prepare the Rice

Wash and soak basmati rice for 30 minutes. Boil water in a large pot with whole spices (bay leaves, cardamom, cinnamon). Add the soaked rice and cook until 70% done. Drain and set aside.

Prepare Mushrooms

Clean and slice the oyster mushrooms. Marinate them with yogurt, biryani masala, salt, and half of the fried onions. Let it rest for 15 minutes.

Cook the Base

In a heavy-bottomed pot, heat oil and fry the sliced onions until golden brown. Add the marinated mushrooms and cook for 5-7 minutes until tender.

Layer and Cook

Layer the partially cooked rice over the mushrooms. Sprinkle remaining fried onions and mint leaves. Cover with aluminum foil, then place the lid. Cook on high heat for 3 minutes, then reduce to low and cook for 45 minutes.

Rest and Serve

Turn off the heat and let it rest for 10 minutes without opening the lid. Gently mix and serve hot with raita and pickles. Garnish with fresh mint and fried onions.
